Taco Tuesday + Cinco de Mayo

I've never met anyone who doesn't love a good taco, maybe because there are so many different ways that you can do a taco up?! Since it's Taco Tuesday and Cinco de Mayo (Coincidence? I think not), I thought it'd be the perfect time to share my fav, healthy taco recipe with you all. Yes, healthy tacos do exist for any doubters out there and they are delicious, nutritious and satisfying! So read up, then head to the store for the ingreds listed below (buy organic when possible) and get ready for a FIESTA in your mouth!

What you'll need: 

-Wild-caught Mahi Mahi (or you may use shrimp, organic chicken, or cubed butternut squash- for my vegetarians/vegans) 

-Non gmo corn tortillas

-1-2 avocados  

-Shredded cabbage

-2-3 limes

-1 lemon


-Garlic cloves  

-1 red bell pepper

-1 sweet onion

-1 jalapeño  

-1 can black beans

-Olive oil 

-Seasoning: Black pepper, Himilayan pink salt, garlic powder, and paprika

Now what? 

-Defrost the Mahi Mahi, if needed (or prep whatever filling you have chosen)  

 -Finely chop the bell pepper, onion, garlic and jalapeno and put in a pan with olive oil, garlic powder and sea salt and sauté on medium heat.

-In another pan with olive oil, add the Mahi Mahi (or chosen filling) and seasonings of choice (if doing butternut squash add lots of paprika) and fresh squeezed lime juice

-While the vegetables and filling are cooking on the stove,  mash avacodo(s) with a fork and mix in cilantro, pico, fresh lemon and lime juice, garlic powder and sea salt, set aside

-Cook black beans on the stove

-When the filling and vegetables are almost done, heat up the tortillas in the oven at 250 for about 7-10 minutes

-By now the black beans should be cooked, turn down heat or turn heat off

-Once the vegetables are done (they should be tender and their flavors should be coming out) and the Mahi Mahi or other filling is cooked, turn off the heat for both and prepare your healthy tacos:

- Add guacamole to the corn tortillas, then add filling, the sautéed vegetables, and black beans. top with cabbage, salsa, pico, cilantro and squeeze with a fresh lime. If you MUST have cheese, I recommend using goat cheese, vegan cheese or organic mozzarella. 

-Indulge in a big bite of this perfect, healthy taco
